Aji de Gallina: One of Peru’s signature dishes composed of hand torn chicken pieces in an aji amarillo and roasted walnut sauce.
Lomo Saltado: Morsels of flat iron steak sautéed with onions, tomatoes, and finished in an aji Colorado sauce.

Tallarin Verde: Pasta tossed in a basil sauce with a hint of cream and topped with choice of sautéed mushrooms, Brandt Ranch skirt steak, or grilled chicken breast.

Bistek a la Trujillana: Grilled Brandt Ranch skirt steak with a caramelized onion, aji Amarillo, and chicha de jora, served over roasted sweet potatoes with sautéed greens.
Costillas en Jora: Beef short ribs braised in sacred chicha de jora beer served over aji Amarillo seasoned mashed potatoes.
Arroz con Pato: Tender seasoned duck confit and a pan seared duck breast with a cilantro and cumin seasoned rice, with peas and carrots. |
